FOR THOSE WHO DON'T LIKE BROCCOLI - How to eat a mountain of broccoli. A Public Service Announcement9/20/2015 I made this sauce as a part of a vegan meal recently. I decided it could could also work for vegetables only, & broccoli soaks it up & delivers it to tastebuds admirably. You can add more stuff, whatever you want, but remember if you add things that contain a lot of water (like bell peppers or round onions) you will need to add more of the other flavored as well. Sauce: 1/2 cup vegetable broth 1/2 cup orange juice 1 1/2 tbsp rice vinegar 1 tbsp soy sauce 1/2 tbsp fresh ginger, grated (I put mine through a garlic press, worked out fine, chop it first) 1/8 tsp cayenne powder Mix that all together & set aside Veggie mix: 4 cups broccoli. Yeah, you heard me. 1 green pepper 1 bell pepper, your choice of color (or 2 halves) 1/2 medium white onion 1 bunch green onions (8 or so) 2 or 3 garlic cloves, through the garlic press with them, chop everything else coarsely, whatever bite size is for you. Put the veggie mix in a pot with a bit of oil on the bottom, medium heat & cook for just a few minutes. Mix 1 tbsp corn starch into the sauce mixture thoroughly, add to the pot & cook a few more minutes. It goes really quickly after everything is prepped, and super tasty. I plan to add my usual favored options, bamboo & water chestnuts & see how that goes.
